Super easy recipe for protein-rich crunchy seed crackers.
These make a great protein snack or crunchy addition to salads/soups and light lunches.
Ingredients (approx 20 crackers):
Seed Crackers:
3 egg whites
1 Tbs EVOO
3g salt
50g chia seed
250g mixed seeds
Method:
Preheat the oven at 180°C.
Separate the egg whites from the yolk. (Save the yolks in the freezer to make custard desserts.)
Add the EVOO and salt to the egg whites and whisk until they are white and foamy.
Pour in the seeds and stir until combined. Leave to sit for 10 minutes then stir again.
Pour the mixture onto a lined baking sheet, thin it out with a spatula so it is even and around 1-2cm thick.
Bake for 30 minutes or until golden brown all over.
Leave to cool down on a wire rack then break into smaller cracker sized pieces.

These seed crackers are gluten free, full of protein and satisfyingly crunchy!
The chia seeds are important as they soak up the moisture from the egg whites to bind the mixture together. Otherwise, I use a mix of linseeds, sunflower seeds and pumpkin seeds but feel free to get creative and even throw in some nut pieces. You could also add aromatic seeds such as cumin, fennel or nigella seeds, I'd start off with 1 Tbs in the recipe.
