Purple sprouting broccoli pasta recipe

An easy midweek pasta that's both healthy and delicious!

The perfect purple sprouting broccoli recipe to showcase this seasonal ingredient.

The combination of a rich silky sauce with miso, brown butter and wild garlic, mixed with tender broccoli and pasta works so nicely.

Ingredients (serves 2):


Purple sprouting & brown butter pasta recipe:
  • 200g purple sprouting broccoli

  • 40g butter

  • 10g wild garlic (or a small garlic clove)

  • 18g parmesan

  • 1 lemon

  • 30g walnuts

  • 1 tsp miso paste

  • 160g pasta

Method:


  1. Slice up the purple sprouting into bitesize pieces. Blanch it by cooking in salted boiling water for 6 minutes, then drain and rinse under cold water.

  2. Zest the lemon and save to the side.

  3. In a food processor, blend together the wild garlic/peeled garlic clove with the parmesan, walnuts, lemon juice and salt.

  4. Put the pasta on to cook.

  5. In a large pan, add the butter and lemon zest and leave to brown on medium heat for 5 minutes. It should start to foam up before turning brown. Immediately add the broccoli to stop the butter burning, then the miso and about 1/2 mug full of the pasta cooking water.

  6. Once al dente, drain the pasta and add to the sauce. Stir until the pasta is evenly coated, add a bit more water if needed.

  7. Finish with a grating of parmesan and dig in, bon appétit!

  • To make this recipe speedier, forget the food processor and simply add a bit of parmesan and lemon juice to the pasta before serving.

Keys to success:
  • Make sure the walnut paste is smooth for silky texture.

  • Avoid burning the butter, add th broccoli as soon as it starts to turn brown and stir.

Calcium - needed for the conversion of tryptophan to serotonin, one of our good mood hormones.

Anthocyanins - inhibits MAO which breaks down the hormone dopamine. Excess MAO can sometimes be the cause of depression.

Delphinidin (a type of anthocyanin)- reduces ACE (angiotensin converting enzyme) expression and therefore lowers blood pressure.

Vitamin C - involved in converting dopamine to noradrenaline - low amounts of noradrenaline are associated with depression.
