Looking for a broad bean recipe? This easy vegan dip is perfect for sunny days.
Creamy, herby, tangy and fresh dip recipe inspired by a green goddess dressing. Perfect to spread on some crusty bread or pitta, this is the ultimate addition to summer bbq spreads or picnics.
Ingredients (serves 4):
90g broad beans, fresh (if out of season, use frozen broad beans or peas)
1/2 lime, juiced
6g basil
4g dill
6g coriander
4g mint
2 Tbs EVOO
2 pinches of sea salt
1 pinch of cracked black pepper
Method for this broad bean recipe:
Remove the fresh broad beans from their pods. If using frozen, thaw out in the microwave on full power for 30 minutes intervals, stirring each time until defrosted.
Put all the ingredients in a food processor and blitz until smooth.
Serve on a dish with and extra drizzle of EVOO, pinch of sea salt and crack of black pepper on top.
Spread on toast, focaccia, pitta breads, etc. and enjoy! Bon appétit!
